Wine aficionados, restaurant owners, wine retailers and grape growers can now easily live out their dream of having a custom wine professionally made to suite their taste – without starting a winery.
Signe Zoller, a professional winemaker with over 20 years of experience has opened Zoller Wine Styling, a winemaking enterprise in Paso Robles offering a full range of professional winemaking services to produce small lots of custom luxury wine.
Signe began her winemaking career in 1984, after earning a Masters degree in Enology from the University of California at Davis and is now one of the most accomplished winemakers in her field. Signe has held senior winemaking positions at Cambria Winery and Meridian Vineyards in Paso Robles. Award winning wines are just part of her career portfolio she has also professionally judged wine competitions including the prestigious Orange County Wine Competition and is a past President of the American Society for Enology and Viticulture. She has been named “Winemaker of the Year” from both the Paso Robles Wine Country Alliance and the Central Coast Winegrowers Association.
Although Signe found contributing to the success of the wineries she worked for to be fulfilling, she yearned to further her winemaking experience, desiring to share with others the gratification and reward of crafting luxury wine. She discovered that many wine aficionados and wine trade professionals envisioned making custom small lots of premium wine, but had limited choices in how to go about doing it. Thus, Signe designed Zoller Wine Styling to be an affordable custom winemaking services company, based on creating wines that truly reflect the individual needs and preferences of the client. Wine growers needing high quality wine samples of their fruit, restaurant owners who would like a distinctive private label wine, or wine lovers who simply want to learn more about winemaking and create their own wine – perhaps as a stepping stone into the industry - are just an example of the client profiles that Signe can assist. “Customers will have access to the same premium grapes, equipment, barrels and styling that the professionals have, so they can produce the same high quality wines, but they won’t have to make huge financial and time outlays.” Signe states, “It’s a perfect way to get your feet wet in winemaking, without getting soaked.” Zoller Wine Styling clients will have the option to be as involved as they wish with the entire winemaking process - from grape selection to packaging.
Signe starts the wine styling process by having clients take “The Wine Personality Test” to assess the preferred style profile of the wine. From there, grape sourcing begins. During harvest and crush, important winemaking decisions are made, and then it’s on to the cellar work, with the pressing, aging, racking and other processes that result in the transformation of grapes to wine. Before the wine is ready to bottle, Zoller Wine Styling can also advise clients on how to best package their wine for its intended use and assist with the package procurement. As legal compliance is professionally handled through the entire winemaking process, clients have the choice of either bottling their wine for resale or their own personal use.
